Cooler water can soften delicate greens. Fresh, well-stored leaves and clean-tasting water matter. Use more leaf for a fuller cup before adding time; excess extraction can add bitterness. Always separate leaves from water after steeping. For another infusion, keep wet leaves for the same session and taste as you go.
