Why Temperature Matters
Water temperature is the single most important variable in tea brewing. Different compounds in tea leaves extract at different temperatures. Amino acids like L-theanine (responsible for sweetness and umami) extract at lower temperatures, while tannins and catechins (responsible for astringency and bitterness) extract at higher temperatures. Using the correct temperature ensures you extract the desirable flavors while minimizing the harsh ones. Even a 5–10°C difference can transform a tea from sublime to undrinkable.

How Temperature Changes Flavor
At lower temperatures (65–75°C), teas highlight sweetness, floral notes, and umami. As temperature increases (80–90°C), body and depth develop with more complex flavors. At high temperatures (95–100°C), bold, robust, and astringent characteristics emerge. This is why delicate white tea needs cool water to shine, while robust black tea and herbal infusions need near-boiling water to release their full potential. Temperature is your primary tool for shaping a tea's character.
Best Water Quality
Since water makes up over 99% of your cup, its quality directly determines your tea's quality. Filtered water is the gold standard — it removes chlorine and impurities while retaining essential minerals like calcium and magnesium that help extract tea flavors. Mineral water works well for robust teas but can overpower delicate varieties. Avoid distilled water entirely as it produces flat, lifeless tea. If using tap water, run it cold and let it sit for one minute before boiling to allow chlorine to dissipate.
Ideal Tea-to-Water Ratio
The standard ratio is approximately 2 grams of loose leaf tea per 200 ml of water. Delicate teas like white and green may use 1.5–2 g, while robust teas like pu-erh benefit from 3–4 g per 200 ml. Tea bags typically contain 1.5–2 g of fannings (small leaf pieces) that extract faster than whole leaves. For gongfu brewing, ratios are much higher — typically 5–8 g per 100 ml — producing concentrated infusions meant to be consumed in small cups over multiple short steeps.
Altitude & Boiling Point
At higher altitudes, atmospheric pressure decreases and water boils at a lower temperature. At sea level, water boils at 100°C. At 500m it boils at approximately 98°C, at 1000m around 97°C, at 1500m about 95°C, and at 2000m roughly 93°C. This means at high altitudes, you may not be able to reach the temperatures recommended for black tea and pu-erh without a pressure vessel. Temperature Conversion Formulas
Celsius to Fahrenheit
°F = (°C × 9/5) + 32
To convert a temperature from Celsius to Fahrenheit, multiply the Celsius value by 9/5 (or 1.8) and then add 32. For example, 75°C × 1.8 = 135, then 135 + 32 = 167°F. This formula is essential for using tea guides that reference Fahrenheit when you only have a Celsius thermometer, or vice versa. Most of the world uses Celsius, but many American tea resources still reference Fahrenheit.
Fahrenheit to Celsius
°C = (°F − 32) × 5/9
To convert from Fahrenheit to Celsius, first subtract 32 from the Fahrenheit value, then multiply the result by 5/9 (or approximately 0.556). For example, (212°F − 32) = 180, then 180 × 0.556 = 100°C. This is the inverse of the Celsius-to-Fahrenheit formula and is useful when following American tea brewing guides that list temperatures in Fahrenheit.
