With black tea, scientists commonly refer to this as tea cream. It forms as tea cools and compounds that were dissolved in hot water begin associating with one another.

The process is more complicated than saying that “tannins simply fall out of the tea.”

Research on black tea shows that polyphenols, including theaflavins, participate in forming tea-cream particles. Caffeine can join these particles and increase their mass, while calcium can encourage additional cream formation.

Green tea can develop tea cream as well. Research published in the Journal of Agricultural and Food Chemistry has demonstrated creaming in nonfermented green tea, so cloudiness is not limited to black tea.

Why Does Tea Turn Cloudy When It Cools?

Temperature is one of the biggest reasons the haze becomes visible.

Some compounds that remain dispersed in hot tea become less stable as the temperature drops. They begin joining together into larger particles, producing the cloudy appearance known as tea cream. Researchers studying black tea describe tea cream specifically as a precipitate that develops as tea cools.

How to Prevent Cloudy Iced Tea

If clear iced tea matters to you, start with the variables that have the strongest practical effect.

1. Try filtered water.

This is one of the easiest troubleshooting tests because water composition can significantly influence tea turbidity.

Make one small batch with your normal tap water and another with neutral-tasting filtered water.

Keep everything else identical.

2. Do not make the tea unnecessarily concentrated.

Higher tea concentration has been associated with stronger and earlier tea-cream formation.

If you brew a concentrate specifically for iced tea, dilute it to the intended drinking strength before leaving it chilled for long periods.

3. Control steeping time.

Leaving tea bags or loose leaves in hot water much longer than necessary increases extraction.
